VIEW 202 “at the market”
ORGANIC QUINOA SALAD:
(GREAT IN LETTUCE CUPS)
1 cup prepared organic red quinoa
2 cup small diced summer squash
2 cup small diced heirloom tomato
2 ea fresh avocado, diced
½ cup fresh basil, chiffonade
½ cup Honey Vinaigrette
Mix all ingredients WELL. Season to tasted with
sea salt & fresh ground pepper. Optional, top
with North Valley Farms goat cheese.
Yield: 3 Cups
¼ cup Shallot, chopped
1 tsp Garlic, minced
½ cup Champagne vinegar
½ Tbsp Fresh Thyme, chopped
½ cup Honey
½ Tbsp Sea Salt
½ tsp Fresh ground black pepper
1 ½ cup Olive oil
¼ cup cold water
Blend well all ingredients except oil & water.
Slowly add in oil. Thin out with water to liking.
